Japanese sake brand "Furosen": 1 minute introduction
Furosen is the Japanese sake made in Uehara shuzou located in Shiga prefecture.
Their production method is Yamahai-shikomi by using yeast living in their Sake brewery instead of adding artificial yeast.
Yamahai-shikomi is the production method that "Yamaoroshi", which is to stir steamed rice, koji and water, is skipped.
Japanese sake is usually judged "Dry or Sweet", however, Furosen is a tasty sake.
Information about Sake brewery
The Sake brewery is Uehara shuzou located on the west coast of Biwako. Cold wind comes from the Hira mountains and snow piles up up to 30cm in the winter.
There is a well in the brewery so infiltrated soft water gushes free throughout the year.
They do not rely on the machinery, making about 90,000 litters of Japanese sake.

Japanese sake brand: Furosen Yamahai Junmaiginjo Usunigori
This is the Japanese sake I bought this time. (1.8 litters bottle). Because it is namazake, it was placed in cold storage.
Namazake is the Japanese sake that is not sterilized so that yeast is alive, proceeding in alcohol fermentation.
The cap is written "Michi ni shitagaeba kichi", meaning "If you go on the right way of life, you will become better".
This comes from Chinese classic "Book of Documents".
We can feel that they make Japanese sake sincerely.
It is a little bit cloudy.
First, drink cold one
Aroma is almost nothing.
It is a strong taste. Just after I sipped, I thought "Is it concentrated juice?"
You can feel the explosion of sweetness, umami, and fresh acidity.
The taste of this Japanese sake is completed. But if you want to drink it with food, something sweet and sour is better such as shrimps in chili sauce or sweet-sour pork.

I warmed up to 45 degrees.
The first attack is bit weak when you sip compare to cold one.
