The Japanese sake I bought is Arabashirigenshu Junmaiginjo Fukurotori. Let me explain about it.

After fermentation, squeeze moromi to separate sake and sake lees. at the beginning of squeezing, we call "Arabashiri", the middle is "Nakagumi (Nakadori)", and the last is "Seme". Arabashiri has a lot of amino acid so that taste tends to be strong.

It is Kaetsushuzo located in Tsugawa Niigata prefecture, 50km away from Niigata station.
This region is foggy throughout the year because a warm current and cold one is mixed here. It means humidity can contribute to growing Microorganisms and fermentation.
The river does not dry up even in the summer. They use the soft water when making Japanese sake.

This is the sake I bought. Because it is Namasake, it kept in cold.
Namazake is the sake without pasteurization. Sake yeast is alive, proceeding to Alcohol fermentation.

First, cold temperature
The aroma is fruity, like muscat grape. The taste is acid and bitter like grapefruit. It is up to you, but I like it.
It is sharp and has a little bit umami. Defferent from Furosen, it is better to drink Maruniboichi with meal.
How about warm one...
IT was warmed up to 45 degree.
The aroma is like steamed rice. The bitter taste is gone and acidity attack became strong.As if wave crashes against coast, the taste is strong.

It is wild tasted because of Arabashiri. However, the rice is gohyakumangoku, basically sharp so that it is not too wild.
It is not uncontrolable taste. It is characteristic.
