I tweeted below.

 

The fruity aroma, like muscat grapes and bitter taste like grapefruit in room temperature. When heated to 45 degree, the bitter taste turns into strong acidity attack as if wave crashes against a coast. The impact comes from Arabashiri of new sake.

"maruniboichi" is Japanese sake made by Kaetsu sake brewery. The brand logo looks complicated. Why is it so unfamiliar...?

 

The Japanese sake I bought is Arabashirigenshu Junmaiginjo Fukurotori. Let me explain about it.

 

  • Aabashiri:First obtained sake when the sake is pressed
  • Genshu:Undiluted sake
  • Junmaiginjo:The ingredients are only water and rice polished by over 40%
  • Muroka:Unfiltrated sake
  • Fukurotori:Colleting sake by bag-hanging

 

The rice is 100% Gohyakumangoku, which is major renowned shuzo-kotekimai varieties. It grows best in the hokuriku region such as Niigata, Fukui, Toyama and Ishikawa prefectures.

 

Point

After fermentation, squeeze moromi to separate sake and sake lees. at the beginning of squeezing, we call "Arabashiri", the middle is "Nakagumi (Nakadori)", and the last is "Seme". Arabashiri has a lot of amino acid so that taste tends to be strong.

 

Brewery Information

 

It is Kaetsushuzo located in Tsugawa Niigata prefecture, 50km away from Niigata station.

 

This region is foggy throughout the year because a warm current and cold one is mixed here. It means humidity can contribute to growing Microorganisms and fermentation.

 

The river does not dry up even in the summer. They use the soft water when making Japanese sake.

This is the sake I bought. Because it is Namasake, it kept in cold.

 

Namazake is the sake without pasteurization. Sake yeast is alive, proceeding to Alcohol fermentation.

The aroma is fruity, like muscat grape. The taste is acid and bitter like grapefruit. It is up to you, but I like it.

 

It is sharp and has a little bit umami. Defferent from Furosen, it is better to drink Maruniboichi with meal.

IT was warmed up to 45 degree.

The aroma is like steamed rice. The bitter taste is gone and acidity attack became strong.As if wave crashes against coast, the taste is strong.

It is wild tasted because of Arabashiri. However, the rice is gohyakumangoku, basically sharp so that it is not too wild.

 

It is not uncontrolable taste. It is characteristic.
